I managed to make the productivity folder go away but in the process I killed
my calendar icon.

You will have to drag files out of the folder until it disappears.
If there are just two apps in it, dragging one out should do the trick.
You could call Apple Accessibility and do a screen share with them so they
could direct you through the process if you are not sure how to do that.

So I still have neither the dexterity nor coordination to get into the
control center reliably and the hardware keyboard shortcut doesn’t work. While
trying to get into the control center, I inadvertently created a productivity
folder. How do I go about removing that?
