Normally you touch the status bar. When you know you are there you you do a 3 finger swipe up to open the control center. You shouldn’t need to try and hold it in place.

I ended up using both hands to get into the control center. The first mistake I made was to hold down a status bar item while swiping up with the three fingers on the right hand. After several attempts at this I got no where. It was suggested that I touch the status bar item and swipe at the same time which required one finger on one hand and the other fingers of the other hand but that worked. Unfortunately, at this point, using a hardware keyboard to get to the control center is a non starter. That is different. If you call Apple Accessibility and they want to do a screen share, they will send you a notification that you accept, and then double tap on agree, and now they can see your screen and tell you what to do. If there are just two apps in it, dragging one out should do the trick. You could call Apple Accessibility and do a screen share with them so they could direct you through the process if you are not sure how to do that.
