Same here, the email receipt can come anywhere from shortly after a purchase to 
a few days later.
You can always checked  your purchased items on your account, but as Richard 
said, if you obtain your purchase it obviously went through, otherwise I would 
say call Apple or look on one of your previous receipts if you keep them and 
email that email on there for support, I think it's 
[email protected].
Maybe check your trash folder to see if the emails end up in there.

It's not uncommon for me to receive a receipt several days after buying 
something from iTunes, especially if the amount of the purchase is small, such 
as buying a single track. That's the way it's worked for me for years.
