Or you could just do a quick two-finger single-tap when a message comes in to shut VoiceOver up. Personally, I'd rather have the setting for describing images on than turn it off for such a small problem, but to each their own. I also don't really mind my phone vibrating when a new message comes in, so I'd leave the in-app notifications setting on, too. I like to know when I've gotten a new message.
