Richard,
Go to the VoiceOver settings and look for Typing Feedback. There will
be 3 headings on this screen for software keyboards, hardware
keyboards, and Braille Screen input. I have mine set to words on all 3
since I don't need to hear each letter or contraction when entering
Braille either.
