In my experience, switching typing mode to touch does not turn off slide to type. When I got my iPhone 11 I was able to enter my Apple ID and so on with slide to type enabled. You just need to be a bit quicker when finding a character and lifting your finger. If you’re too late, you can just lift your finger and hit the delete key to erase whatever you got with slide to type and then pick up where you left off. It was a bit tedious for me since I was used to Gboard or a smaller iPhone, but I was able to get in to the point where I could increase the delay before slide to type kicks in.
