All I ever do is take the SIM from my old phone and  put it  in my new phone 
and that is it.
The old phone then still works on WiFi for everything except regular phone 
calls, but as long as you are on WiFi you can still make Facetime calls and so 
on.
If you ever want to sell the old phone just turn off Find my iPhone, sign out 
and then go to Settings > General > Reset and do a full reset. This will erase 
everything and the phone will reboot to the same “Slide to Setup” screen you 
have when you get a brand new phone. I f a blind person buys the phone they can 
at this point press the home button 3 times and Voiceover would start just as 
on a brand-new phone coming out of a box.

As soon as you activate the new phone you will no longer be able to make calls 
from the old phone. You can activate over the phone by calling your provider.

it be that for a time both phones are active until the old one is deactivated? 
Just not sure what to expect, as I always went to the Apple store on launch day
