WiFi assist does not impact your use of cellular at all. What it does is it switches to cellular if your WiFi signal is weak. So, if you have unlimited cellular data, it may not impact you; but if you are like a lot of us and have limited data, you want to turn that setting off so you don't burn up your cell data thinking you are on WiFi.
