I’m not sure which iOS version you have.
I had this problem recently with iOS 12.4. I couldn’t enter anything into the first name field. I selected another field like last name. I entered something there. Then I was able to go back to the first name field and successfully enter the name. Whenever I get a call from an unknown number for which I want to create a new contact, I find I can’t type anything into any of the edit fields such as first or last name or email. This is true with both the onscreen keyboard as well as a bluetooth keyboard. Simply adding a new contact (not from an unknow number) works fine. If this is a bug I will report it to Apple.
