I don't know if there is a setting that determines that. But, in both the case of reminders and shake to undo, at the top of your setting screen is a search field. I've begun using that when I am not sure where the setting is buried. Just enter shake, and you will find what you are looking for. Try reminder, and see if there is more than one place for that. Otherwise, for more details, I think I'd call Apple Accessibility. It came through loud and clear and spoke the text of the reminder. You do know you can set any of your tones, alert tones, classic, or your ringtones as reminder sounds. I have one from the original Adams' Family with the Gong and Lurch saying "you rang?" Very hard to miss. It is a ringtone I created. But, the sounds work for me with any of them.
