You have to define what you want it to do. Under: settings. accessibility, voiceover, commands, touch gestures. You will find a list of gestures and the back tap is all the way at the bottom. There is a double tap and a triple tap. If you double tap on one of them you will see a list of options for what you want the back tap to do.
