Yes, that is what I have found--the new way to deal with changing the time is 
just a nuisance!

I was talking about if someone started an event, and wanted it on a different 
date ...
It is hard to cover all situations at once, but any method will do.  I too tend 
to start on the date where I want the event.

Well, actually, any more, it is easier to just tell Siri when I want the event 
and the title and it is done.

Richard: if you go to the date on the calendar and then go in to put your event 
in, does it not stay on that date? If you go in to another day, say the third 
and you want the 20th, then you have to go through all the dates inside the 
event part. This is at least what I found. Sometimes, The calendar will shift 
and it causes me to have to find the date inside the event part, but most of 
the time it stays right there. I think it’s something that I’m doing with my 
swiping. However, I did it both ways, and I found that it stayed where it was 
at on the day I was on and wanted.r

If you want an event at 9 AM, you would enter 0900, then flick right to the AM 
button and double tap it.
If you want 1:45 PM, use 0145 then flick right to PM and double tap.  
If you want a different month, flick right to the month picker and like of old, 
flick up or down to change months.
Then, flick right to the date.  You then get to flick right through all of the 
bloody date buttons and double tap the one you want.

I just tried to add a new event in my Calendar on my iPhone SE 2020. This is 
the first event I have tried to add since upgrading to IOS14.0.1. I was unable 
to choose a new time as the old time picker seems to have been replaced with a 
keypad, though I can't seem to get the numbers to go in the correct place. I 
attached a screen-shot of the calendar screen for them. I have been using my 
calendar and creating events with VoiceOver for four years--this is the first 
time I was not able to change the default time.
