I don't think any of the IOS scanning programs do a satisfactory job of scanning documents. In my opinion, there is nothing better than a flat-bed scanner and some program for doing the ocr. Kurzweil 1000 and openbook are somewhat pricy but do an excellent job. Serotek (or whatever they call themselves now) sell docuscan for a couple hundred dollars and would, I think meet your needs. JAWS itself has convenient OCR which renders excellent results but doesn't export very well. Handytech--who's name, I think, has changed--sells Iread for much less than either k1000 or openbook and would also meet your needs.
