In my experience, essentially you cannot really work with them on an iPhone. You can read them, but trying to edit is mind-bogglingly crazy.
I've written o the Accessibility team at Microsoft about the absolutely insane amount of extra verbiage you get on an iOS device with Excel. If I hear the font color and size and cell coordinates one more time I'm likely to explode. Reading excel sheets by opening them through OneDrive is a reasonable experience. Numbers might have a little less of the extra verbiage, but again, editing is not reasonable. It is far better to stick with a computer if you need to edit spreadsheets in my very opinionated opinion.
