Hi, There is a free Apple book for using Numbers. You can get it using the Books app. It is called "Numbers User Guide for the iPhone by Apple".
I suspect this book is written for sighted users but there may be enough useful info in it to get started with Numbers. There is also a version for the iPad. I can't comment on Excel on the iphone as I have never tried it. I hope this helps.
