Because they want to document the fact that you or they sent the money in case it ends up in court. It probably won't, but you do want the screen shot as do they. I don't have an Iphone 8 so can't advise on how you take a screen shot but someone here probably does and can. Either way, Id not argue this point, the person is correct.
