And there is a good chance that if you just wanted to call this person you could double tap and hold on the phone number and it would ask you to call it and it may also give you an option to copy it. Anyways, if you wanted to call anyways and you can do it this way then after you call the number is in your Recent Call list and you can flick down to "More" and double tap, then if you want to add this to your Contacts you can select the option to Create a New Contact, the phone number at that point would already be there and you would just have to put in a first and last name and/or a company name.

If you then do a three finger quadruple tap then you will just get the number VoiceOver read copied into the clipboard. If that doesn’t work, then you can twist the roter until you get to text selection, flick up or down to select how much text you want to select at a time and then flick left and right to highlight the text you want to copy. This may be easier if you use line or character to get to the text you want to select first. After you have the text you want then twist the roter until you get to edit and then flick up or down to copy and double tap to copy the text you just selected into the clipboard. Once you’ve done this, go to the app where you want to paste the text, twist the roter until you get to edit, flick down to paste and double tap.
