First I would manually sign out of Facetime and iCloud. Then go to Settings > General > Reset and choose to Erase all content and reset settings", not sure if that is the exact wording, but that should be close. Once you accept this everything will be erased and the phone is set back to factory settings, if you give it to a blind user they can press the home button 3 times to start Voiceover and end up at the same "Hello" message in multiple languages which you get when you get a brand new iPhone and they can set it up from there.
