I haven't used Zoom on my phone, but I doubt this is related to Watch OS. Whenever I'm playing something on my phone I see the Now Playing icon on my watch face where the unread notifications icon would be. This allows you to control what's playing on your phone, such as raising or lowering the volume, playing or pausing and so on. It's not about having audio come through your watch instead of your phone.
