Well, you kind of answered your own question. If you don't want it, go ahead and turn it off. It only comes up when you change something like a password, or another privacy type setting in whatever app or service is using it. Then, they send you a code, usually 6 digits, that you have to enter in a box to proceed.
It can get annoying, but it works well and is another layer of protection. It is entirely up to you if you want to deal with it. The app will probably still work even with it off..
