My Orbit Writer does announce what I'm deleting when I backspace. I can't track down a setting that would change this though. I will say though that if you're using contracted braille then the Orbit Writer will get confused when you start backspacing. You can avoid this by using uncontracted braille or switching to the on screen keyboard to do your deleting.
I was also just looking through my Orbit Writer documentation, and another misconception I'd like to clear up is that you can connect your Orbit Writer through the braille support in VoiceOver, but you can also connect it as a keyboard through the Bluetooth settings. I don't do this myself, but I know some expressed a concern about having to go through the VoiceOver settings to pair the Orbit Writer.
