I’m not sure what you want to do. Your message sounds like you want to get your 
Apple Watch as if nobody did anything to it. If so, this would also erase the 
cell sim in it. If so, I don’t know how to do so.

If you just want to reset the watch, do one of the two following.

Press and hold the crown and side button at the same time for 10 seconds.

The other method might be where you’ll find other reset things. On your iPhone, 
open the Watch app. Unless you’ve done something else on another tab, you’ll 
find yourself where you need to be to do this. It’s the left tab on the bottom. 
Go to General. In there, there’s a reset option. Perhaps there’s a reset to 
factory defaults.

Hope what I know helps, or at least gets you in the right direction.

I just got an Apple Watch Series 7, and while the T-Mobile in-store customer 
service person was willing and able to set my watch up for me, and attach it to 
my phone for me also, what are the steps for how to set an apple watch form 
factory default settings?  I know someone, possibly Jonathan Mosen, did a 
step-by-step about this perhaps a year or so back, but for the life of me I 
can’t remember when it was.
