Hello, To be honest, I do not know why you would want to remove your wife's phone from your account unless, of course, you want to add it to her account.
If you remove her phone from your iCloud account, the phone will still have the 6-digit unlock code on the device, itself. What the message is indicating is that, if not attached to your iCloud account, then if someone knows the 6-digit unlock code, then they could add it to their iCloud account; which would be the natural scenario were the phone sold or stolen. So, ideally, you will want to remove the phone from your iCloud account and then register it with another iCloud account as soon as possible.
