Here is what I get from Google about YouTube Premium: Upgrade to YouTube Premium and get YouTube and the YouTube Music app ad-free. Terms apply. Enjoy YouTube videos and music ad-free, offline, and with your screen off.
So, to my knowledge YouTube Premium primarily gives you add-free content, YouTube Music, the ability to download content and to watch with your screen locked or with content running in the background.
