The document channel uses the cloud for scanning, so it is only as secure as Microsoft's servers. If you want something that does all the scanning on your device, I use Voice Dream Scanner, now called VDScan. I believe it i still $9.99. Not only can you save it, but you can easily do multi-page documents.
