A new note is a good way to do this. If you hold your finger too long on any given letter, that is when you will hear about alternative characters available, etc.
So, if you touch a letter, and it isn't the one you want, immediately slide your finger until you hear the letter you want and lift your finger. That does take practice. But even if you hear alternative characters available and don't slide your finger, when you lift your finger, the letter that was originally spoken will be entered.
