Hello Heather,
If I use SIRI and say "Text John Smith, Hello John, meet me in 1 hour and please bring thie keyboard you wanted to show me" and if I pause for maybe 2 seconds in between "meet me in 1 hour" and "and bring the keyboard you wanted to show me" then SIRI will assume I am done, repeat what I said and ask if I want to send it. In my opinion this is normal behavior as SIRI is supposed to recognize a pause as the heads up that I am done. If I want to dictate something in smaller junks of text and know I want to pause in between to think about what I want to say/write, I just open the messages app or mail app, start my text message or email and then use the "Dictate" button. This I have to manually activate and also I have to double tap to stop dictating and here you can pause for a bit longer in between since not saying anything won't trigger the end of the recording/dictation.
