So is there some way to change the configuration to pop?  Would this require 
changing it on both the computer & iPhone?

Hello,
It's your configuration who will make the difference.
If you save your e-mail with pop it means that you will download your messages 
in each device seperatly.
If you choose imap, it's likke you delete from server.
So, if you have pop you can delete on your iPhone and you will see your message 
on your comfuter.
With imap, you delete on iPhone and it will delete on computer too.
