I don't think an Airtag would do what you want, but I guess you could try it.
Airtags work by connecting to devices via Bluetooth so, for example, if you put
one in your suitcase when you travel and the suitcase is handled by a baggage
handler who has an iPhone in his pocket, your Airtag will connect to the iPhone
of that baggage handler and update its location.
Once you are in Bluetooth range which out in the open might be 30 or 40 feet,
it will connect, but it's not going to instantly pop up with a notification and
while you can initiate playing a sound, that is not very loud and I doubt you
would be able to hear it outside if you were 10 feet away, maybe if it were
absolutely dead quiet, but the slightest bit of background noise and I doubt
you could hear it.
I am also not sure if placing it inside a tin can would not compromise the
signal, but you can of course get tons of different protective cases for
Airtags on Amazon and that would be a much better option.
As for temperature, you might be correct that it might not work if it were
super cold since there certainly is not much material between the outside and
the battery so if it were -15 outside, the battery would be that temperature
probably after a relatively short period of time and while Lithium Ion AA and
AAA batteries are actually much better in cold temperatures than regular
alkaline batteries, I think the type of Lithium batteries uses in phones and
such devices are different. Many years ago I once lost my iPhone 6S Plus during
a walk when it was -30 Celsius and when I got home and realized it about 20
minutes later and tried to call the phone with my Mom's phone, it went straight
to voice mail which means the phone had already turned itself off.

Subject: Are AirTags Impervious to Weather

Hello All;

The subject line pretty well says it all. I live in Northern Wisconsin and
considering getting an AirTag to place on a fence post at the end of my
driveway. If I take a walk to the tavern 200 yards from my home can I rely on
the iPhone/AirTag combination to let me know when I’m approaching my driveway
when returning. I don’t intend to permanently leave the AirTag on the fence
post, but rather place it upon leaving my yard.

My chief concern is brutally cold temperatures and whether or not such frigid
temperatures would adversely compromise the effectiveness of the AirTag. I’m
talking well below freezing (i.e. -5 to 15 degrees). My intention is to place
said AirTag on the fence post encased in protection such as a can from veggies
or fruit.

I’d surely appreciate any advice from anybody familiar with the AirTag.
