Hi stacy.

This is an easy fix.

Go into settings then general. Under general go into date and time. There's a button there that says set automatically and it's probably on, so toggle that to off. Now go down to time zone and set it to New Yourk which is the only East coast listing available. After you have done that, you can now set the adjust automatically toggle back to on and you should be good to go. You don't have to redo your Mini setup.
