Hi,

Go to Settings, and choose iTunes and App Stores. In the Automatic Downloads 
section, you'll find a check box for music. If it's checked, anytime you 
download music on any of your devices, it will show up on your iPHone. If you 
uncheck it, it will only show up if you download it on that device.

It's not currently possible to delete individual tracks and albums from the 
iPhone, but I'm pretty sure that will change with iOS 6.1.
