Hi, I highly recommend you have everything set up with imap. This means your computer, your iPhone, and anything else. This way, no matter which device you use, the inbox and labels, called folders, will always be the same.

    computer using the web interface, I assume I could use the iPhone to
    move them into the All Mail folder via IMAP to retain all the
    messages on the Gmail servers and also to avoid having messages I've
    already reviewed again downloaded to my computer's Outlook client
    via POP.

I know this question is primarily procedural but any help in explaining
how mail is treated on the iPhone and helping me accomplish my goal will
be greatly appreciated.
