Until the developer adds more acdcessibility, a work-around is to tap
the dictionary button. The word you are trying to make will show up at
the top of the screen.

Once you set the word length, the difficulty and click on New Game, flick
to the right until you hear VoiceOver say The Current Word. Tap the
letter
you want to change. Flick once more to hear the first letter of the word,
which will say Character 1 and what the letter is. Flick again to here
character 2 and so on. Double tap on the character you want to change.
