I don't know of any podcasts that demo the use of Prizmo, but you can

The guide assumes that you use the app without any supporting stand,
so it is set up for voice activation -- the picture gets taken when
you say, "Take Picture".  This makes it easy to take the picture
without moving the camera when you take the shot and reduce the chance
for image blur, but it also means that in this mode VoiceOver's volume
drops once you enter the camera screen until you take the picture,
This is presumably designed to get a better trigger off your voice
command to "Take Picture" and minimize extraneous noise.  With a
support stand you might rely on the stand to keep the phone from
moving when you take an exposure.  I know that David Chittenden has
described how he uses Prizmo without voice activation for the shot, by
resting one finger on the "Take Picture" button (just above the Home
button, at the bottom center of the screen), then trying to hold the
phone still and doing a split tap with another finger on the screen.
That method might work well for people using a supporting stand, since
it would not have to drop the volume level of VoiceOver.  Similarly,
part of the guide assumes that you need to check brightness level
before taking a picture, so there are details about using the Light
Detector app for that. With the StandScan Pro you'd be using the
lights included in the unit.

I'll just state that although there are different processing screens
for working with the image and doing the OCR processing, you'll mainly
be double tapping the "next" button in the top right corner of the
screen, rather choosing options to correct or modify the image.
