When you start typing a name in the to field, any matching name in your contact list that has a mobile or iPhone is listed as suggestions. These suggestions are displayed below the to field. It is easiest to get to the suggestions by right flicking past the contact button.
If you double-tap on the contact button, your contact list is opened. In this case, find the contact, double-tap on it, then double-tap on the send message button or the mobile button (I do not remember precisely as I always use the first method).
