You will need an OCR app.

Prizmo and Text Grabber are recommended the most. I have both apps. Without the 
StandScan, I prefer Prizmo. Some have reported better OCR from Text Grabber 
when using StandScan. Be aware, Text Grabber requires precise alignment of the 
paper.
