Above the keyboard, there will be a row of symbols It takes a bit of getting used to, but move your finger to one of those symbols, then lift up. After doing that, just flick down. The symbol will change automatically each time VoiceOver speaks each new symbol. If that's not the symbol that you're looking for, just flick left to erase it. Slide your finger over to the next simple, and repeat the process until you find the one you want. From what I've noticed, the symbols seem to be arranged similarly to the symbols on the iOS symbols keyboard layout. That is, each time you flick down to get more suggestions from one of the symbol columns, if you will, they are presented a lot like the rows of symbols on the symbols keyboard of iOS.
