Mail remembers your recent email addresses where you have sent messages. If the email address is in your contacts, it is not remembered in mail recents. To remove an invalid email address from recents, type the first part of the email address or name associated with the email address. Right flick past the contacts button. Go through the list of matching addresses. Double-tap on the more information button which is to the right of any email address not in contacts. In the more information section, you can create a new contact, add to existing contact, or delete the email address from recents.
Therefore, try each letter, individually, to find all email addresses starting with that letter or number and select more info to delete those addresses you no longer want. Note: when you update your iOS device, these recents are not transferred to your new device.
