Hello Nicky, As far as I can tell, you have to have taken a picture and decided to use it before you can get to the screen where you change the language. Before that, OCR is dimmed.
The OCR button is at the bottom right of the screen, and when you double-tap it, you'll get the screen where you change the language. I use both Prizmo and TextGrabber. So I've set one to English and the other to French to avoid having to mess with the language.
