In that case, you have explained very well why the OCR is not working. Forget about the light probe. As long as the lights are plugged in, they are on and providing appropriate light.
It is critical that you set the iPhone square to the box. Setting the iPhone in diagonal means the image is so skewed that OCR WILL NOT WORK. Square to the box means: with the camera in the upper right corner of the back of the iPhone over the hole in the top of the box, the opposite side, the side with the volume buttons, is along the edge of the box. The entire side of the phone is the same distance from the edge of the box. This eliminates skew as much as possible so the page can be recognised using OCR.
