That's true, that will delete the app, but whenever you plug in your iPhone to your computer to be synced, the Apple reappear on your phone. You need to go to the apps tab under your iPhone. So, plug in your iPhone, then move to it in the treeview. After that, tab to the apps radio button and press space to check it. Tab until you reach the apps table, then press the down arrow. Each app name is actually a checkbox, and you will need to uncheck it to prevent it from syncing to your iPhone. When you're done unchecking all the apps that you don't want to sync, tab to the "Apply changes" button, and press space.
