For some reason, when I get to the apps, I see how many I have, but when I try to down arrow, nothing is happening.

You need to go to the apps tab under your iPhone. So, plug in your iPhone, then move to it in the treeview. After that, tab to the apps radio button and press space to check it. Tab until you reach the apps table, then press the down arrow. Each app name is actually a checkbox, and you will need to uncheck it to prevent it from syncing to your iPhone. When you're done unchecking all the apps that you don't want to sync, tab to the "Apply changes" button, and press space.
