Thanks for the info, so I guess I'll have to select my email to start new
conversations when overseas as my number will be unavailable, however that
doesn't matter to my parents? They can still message and face time me even
if my Australian number is the only contact info in their phones?
That correct? *smile*

The "start new conversations from" setting for iMessages determines the ID
that will be shown when you start a new conversation with someone. If you
select your phone number, it'll look a lot like traditional texting where
your mobile number will show up (and in fact, you'll have the option of
falling back to traditional text messaging if the iMessage server isn't
reachable). If you select your Email address, people won't see your mobile
number. Yes, only one of these can be selected, likewise for the caller ID
setting for Facetime calls. One advantage of selecting your Email address as
the default ID for Facetime and iMessaging is, as you've noted, the fact
that messages will reach you even when you're traveling and are using a
different phone number. A disadvantage, for iMessaging at least, is that
there's no fallback to traditional text messaging if you happen to be
without data for a while, or the iMessaging server isn't reachable.

Note that people can reach you using your current phone number and any of
the Email addresses you've associated with Facetime and iMessaging.
You don't have to just pick one! This is only the ID that will be used for
new conversations that you start.
