Yes if you do a restore it will wipe everything off.
If I may ask what ipod is it and how many gigs??

I have an older iPod touch and want to unregister it and get the
stuff off of it before I get rid of it. Is the "restore" setting in iTunes
suppose to do that? Not restore from back up, just "restore."
