Actually, you can continue selecting text. The trick is that your fingers must already be moving when you touch them to the display again. So, lift both fingers from the display. bring them close together in the air. start slowly separating them and touch the display. If you touch the display and keep your fingers still, iOS moves focus to where you are touching after about half a second. This removes the selection.
