Hi Andrew and Chuck,

First, I don't know if there is a way to review what you selectet. However,
I can easily select characters, words or lines whichever unit I set, and
when I get to the edge of the screen, I just put both fingers on the screen
again close together and repeat the pinch out gesture. This does seem to
work well for me and I have often done this 3 or 4 times rather quickly with
good success.

Regards,
Sieghard

It has been my experience that you have to select the text in one motion. If
you stop the pinch, you cannot add more to the select. What I like to do is
start with my two fingers at the upper left corner of the iPhone's screen.
That way I can move diagonally across the screen to give me the most real
estate to work with.
Sighted users do not have this problem, because there are little handles
they can grab and drag through the text.
