Carol, you'll need to go to your email account provider and change your settings there. Where it says keep a copy of messages on the server just uncheck that item. Then when you delete an email message it's gone and will not appear on your computer etc.
Sadly, there is not a way to delete all the messages at once but you can move quickly because iPhone by default groups messages by conversation and there may be quite a few messages in a thread. To delete the thread, flick your index finger down. You will hear the word delete spoken. Now just double tap the screen with your index finger and that hole thread is gone. If you want to open that thread, just double with 1 finger. That way you can cheery pick the messages in the thread.
