The Google books on the web that are not specifically ebooks are scanned images. As far as I'm aware, the only thing you could try is scanning each page and performing OCR on it. This seems extremely labor-intensive. Have you looked for other sources? Unfortunately, it might almost be easier to get a hardcopy outhe book if there are no ebook versions available anywhere.
