I understand how you feel. For several years, I owned a BrailleNote, and having 
the ability to just whip out your note-taker, turn it on, and quickly jot 
something down was really great.

As to your file-storage questions:
I use an appp called Notesy to take notes. I can't remember how much it costs, 
but it's not too expensive--probably only a few bucks. The app has some 
accessibility quirks, though I think they have more to do with VoiceOver rather 
than with the app itself. You can work with files off-line, and they can be 
synced to Dropbox if you use that. I do, and it's super easy to set up and then 
forget about. :D Having your notes synced with Dropbox means that you always 
have things backed up; you can also work with notes from your computer if using 
this setup. I hope this helps you.
