I have several thousand messages in my in box, but I don't find working with my email to be any harder in IOS 7 then it was with IOS 6. My unread messages still all get sorted to the top of my in box so dealing with them is really no different than it was in IOS 6. I assume the starred folder would work the same way. Since it seems that you're using IMAP, you're probably seeing messages that you starred in a different email client that got marked as such on the IMAP server.

The Gmail app is mostly accessible, at least it was the last time I took it for a spin. I do recall editing messages was a bit tricky. since you'll be accessing the same messages on your IMAP server that you're accessing with the native email client, I wouldn't expect it would help at all.

How are you searching through your email now? If you're using Gmail's web interface then I wouldn't think archiving your email would change this at all. I haven't used the search feature in the mail client on the iPhone, but it looks like you need to be in the folder you want to search, so if you move to your Archives folder then I would assume it would work.
